This time, I was involved in the production of mackerel sushi, which I have loved for a long time.

I made smoked mackerel sushi.

"Aged smoked mackerel sushi"

This mackerel sushi is made through two processes: aging and smoking. First, carefully selected high-quality mackerel is aged for a long time, which brings out the umami and richness of the mackerel. The umami that spreads across your tongue deepens as the mackerel is aged, making it truly exquisite.

The aged mackerel is then smoked, giving it a rich aroma and a deep flavor. During the smoking process, excess fat is removed, leaving the mackerel firm and giving it a texture that melts in your mouth.

This time, we will be selling limited quantities in advance on both days of the event.

We are collaborating with SIZUK to create a limited edition GIVE AND GIVE sake.
